This easy slow-cooker Amish sauerkraut soup recipe is made with potatoes, sauerkraut, chicken broth, cream of mushroom soup, cooked chicken, carrots, celery, vinegar and dried dill. The crumbled bacon is an optional garnish. Classic combinations of flavors. The simple ingredients are combined in a slow cooker and left alone to cook for five to six hours. So easy!

You could substitute sliced smoked sausage for the chicken – or add both – to this soup. Store the leftovers in an airtight container in the refrigerator for up to four days. This is great for dinner or lunch and for meal prepping.

Serve this savory soup for lunch or dinner with a side of warm bread and a dollop of sour cream, if desired. So easy and delicious!

  • 1 potato, cut into cubes
  • 32 ounces sauerkraut
  • 4 cups chicken broth
  • 10 ounces (1 can) cream of mushroom soup
  • 1 cup chopped cooked chicken
  • 2 carrots, grated
  • 2 ribs celery, chopped
  • 2 tablespoons vinegar
  • 2 teaspoons dried dill 
  • 5 bacon strips, cooked and crumbled, optional garnish

  • You can use chicken broth or vegetable broth in this recipe. To reduce sodium, use low-sodium broth. 
  • The bacon is an optional garnish, but so tasty in this soup.
  • You could add a dollop of sour cream as an additional or other optional garnish.
  • Store leftovers in an airtight container in the refrigerator and reheat in the microwave. You also can freeze it.

Here's how to make it: 

  1. Combine the potato, sauerkraut, broth, soup, chicken, carrots, celery, vinegar and dill in a slow cooker. 
  2. Cook on high for about 5 to 6 hours. Taste and season with salt and pepper. 
  3. Top with the bacon, if using, as a garnish. Serve.

Unfortunately, this will not result in receiving the health benefits from fermented sauerkraut because sauerkraut that is canned is not fermented. The heat involved in canning destroys any probiotic benefits of your sauerkraut. Canning: Kills beneficial bacteria. The benefits of probiotics are lost when fermented sauerkraut is heated above 106° F (41.1° C). Always look to buy the sauerkraut that is in the refrigerated section as this is most likely not pasteurized and therefore is fermented

Not everyone wants to read such alarmist warnings on every recipe they'd like to make. Most people with well-rounded diets do well enough with nutritional values (including probiotics) because they know how to incorporate balance into their weekly meals. So the outcome of one single recipe isn't going to be that harmful, even if it's too high or too low in specific values. And this recipe sounds like it's worth a try, even with canned sauerkraut (which I have used all my adult life and never had any health issues). Thank you for convincing me to make this recipe.

@ Donna John... I'm 65 & I STILL eat it out of the can, whenever I open one 🤗. My dad couldn't stand the stuff, or the smell, so my 1st gen German-Canadian mom fed it to my sibs & I when he worked afternoon shift. I ❤️sauerkraut, so looking forward to trying lazy man's cabbage roll casserole can wait!
