This savory slow-cooker soup recipe is made with frozen diced potatoes, shredded cheddar cheese, cream cheese, chicken broth, cheddar cheese soup, broccoli and onion powder. This gluten-free soup is great for dinner or lunch and for meal prep during the busy week.
To reduce sodium, use low-sodium broth and soup. To make this recipe vegetarian, use vegetable broth instead of chicken broth.

- 32 ounces (1 bag) frozen diced potatoes
- 3 cups shredded cheddar cheese
- 8 ounces cream cheese
- 32 ounces (1 box) chicken broth
- 10 ounces (1 can) cheddar cheese soup
- 1 head broccoli, cut into florets
- 1/2 teaspoon onion powder, or to taste
Here's how to make it:
- Put all the ingredients into a slow cooker. Season with salt and pepper, to taste, if desired. (If you want to make prep even easier, you can buy pre-cut broccoli florets. Use more or less onion powder, depending on your tastes.)
- Cook on low for 7 to 8 hours or high for 4 hours.
- Serve with crackers or toasted bread. You could top this soup with optional garnishes such as crumbled bacon or green onions, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave. You also can freeze it.
