Chicken soup is just so good for you. Whether soothing someone who is sick or just when you crave healthy comfort food, this hearty chicken soup is just what the doctor ordered.

Ingredients
For initial chicken preparation:
- 1 whole chicken
- 4 stalks fresh celery, cut up
- 1 large carrot, cut up (or 5 to 6 baby carrots)
- 1/2 of a large onion, cut up
- 1 bay leaf
- salt, pepper and seasonings of your choice
For vegetables to be added into soup:
- 1/2 of a large onion, chopped
- 4 - 6 celery stalks, chopped
- 4 - 6 large carrots, chopped (or as many chopped baby carrots as you like)
- 2 - 3 tablespoons olive oil
Here's how to make it:
In a large stock pot, cover one whole fresh chicken with water. To the pot, add initial celery, carrot, onion, bay leaf, salt, pepper and seasonings. Bring to a boil, then reduce heat and simmer for about an hour or until chicken is done. Remove chicken from liquid and set aside to cool. De-bone the chicken, tear into bite-sized pieces and put back into liquid.
In a large sauté pan, add 2 to 3 tablespoons olive oil. Add the additional onion, celery and carrots and sauté until al dente, about 6 to 8 minutes. (Feel free to add other vegetables you like, such a broccoli or potatoes.) Add the cooked vegetables to the liquid. That's it. Soup's on!
