Ingredients
Muffins
- 10 eggs
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon hot sauce
- 1/2 cup chopped frozen spinach, thawed and squeezed dry
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 cup chopped cooked ham
- 4 strips cooked crisp bacon, crumbled
Topping
- 1/2 cup shredded cheddar or Monterey Jack cheese
Here's how to make it:
- Combine all the muffin ingredients in a bowl. Spoon mixture into 12 muffin cups that have been sprayed with nonstick cooking spray. Top with the remaining 1/2 cup cheese.
- Bake in a preheated 350-degree F oven for about 20 to 25 minutes.
