We sprinkled a little bit of this and mixed a little bit of that with Chef Adrianne Calvo! Chef Adrianne is a renowned chef and owner of Chef Adrianne's Vineyard Restaurant and Wine Bar in Miami. She is known for her "maximum flavor" cooking and has appeared on the Food Network's TV series "Chopped."
As a child, Chef Adrianne grew up in Florida to Cuban-born parents. She spent lots of time in the kitchen helping her mother prepare meals for the family. During that time she not only learned the ins and outs of the kitchen and how to prepare a variety of dishes, but she also discovered her passion for food and ultimately began her journey to becoming a chef. Chef Adrianne told us& more about her culinary journey and shared tips on how you can be a master chef in your own kitchen!

Q: What is your favorite summer recipe to create from your cookbooks?
There are so many great summer recipe options, it’s so hard to pick one! My favorite summer recipe has to be mahi mahi ceviche with watermelon and yellow tomatoes. It’s light, refreshing and just screams out summer! And a bonus – it is easy to make!
In a bowl, add cut mahi mahi, lime juice, jalapeño, onion and cilantro. Stir to combine, add yellow tomato, watermelon and salt. Cover with plastic wrap and refrigerate for a few hours. Once plated, just add the ceviche in a line on top of the watermelon. Garnish with jalapeño, radish and chives! Yum!

Q: What is a quick, last-minute dish to make for a Fourth of July cookout?
Summer passes by so quickly and before you know it, it’s already July! Luckily, there are some great last-minute dishes that are easy to prepare for a Fourth of July cookout.

A quick dish you can whip up in no time is summer corn salad. While you’re grilling other meat, throw some corn on the cob on the grill. Once it’s done, take it off the cob, toss it with cilantro and tomatoes, and sprinkle some queso! Done! It’s an easy, fast side dish.
Q: What’s a great summer dish kids will love?
Summer is grilling season! There are so many great creations you can make using your grill! You can never go wrong with BBQ chicken skewers served with ranch dip! Kids will love it because they can help! With a choice of fresh veggies (and maybe even some fruit) this dish is a definite winner!

Q: What are your favorite ingredients to use for summer dishes?
Some of my favorite ingredients to use for summer dishes include fresh fruits and vegetables. Corn, tomatoes and watermelon are refreshing and can brighten up any dish! There are also lots of seafood options for the summer!

Q: How should we be prepping our meat to BBQ?
Prepping meat to grill should be easy and simple!All you really need is kosher salt and freshly ground black pepper. That’s it! Season about an hour before grill time. This will allow plenty of time to permeate the meat. Remember, if you're cooking a steak, take it out of the fridge to come to room temperature before grilling.

Q: What are your favorite veggies to throw on the BBQ?
Veggies on the grill are a summer staple! It’s simple, yet delicious. My favorite veggies to throw on the grill are peppers, onions, carrots, cauliflower and eggplant. Grilled veggies are a great side for any summer meal.

Q: What have been your top three favorite experiences in your career as a chef?
I have had so many wonderful opportunities and experiences as a chef, it’s hard to pick just three. My top three have to be:
- Cooking the annual holiday feast at St. Jude Children’s Research Hospital every year.
- Cooking at the British Virgin Islands Food Fete.
- Participating in Food Network’s South Beach Wine and Food Festival.

Q: What’s next for Chef Adrianne?
I’m always looking for a way to move forward in my career. Right now, I am focused on expanding my Cracked by Chef Adrianne concept. There are currently two locations in Miami, Fla., and hopefully more to come soon. I have also been selected as an honoree for South Florida Business Journal’s 40 Under 40.
