Ingredients
1 head cauliflower, rinsed and lightly chopped
2 tablespoons olive oil
1 teaspoon curry powder
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground pepper
Here’s how to make it:
- In a large mixing bowl, drizzle olive oil over cauliflower to lightly coat.
- Sprinkle curry powder, kosher salt and fresh ground pepper over and gently toss. Add additional olive oil, if needed. Spread the cauliflower onto a rimmed baking sheet.
- Bake in a preheated 350-degree F oven for 20 minutes. Gently toss and continue baking for approximately 20 additional minutes until lightly browned and tender.
