Try this comfort breakfast casserole recipe at your next family gathering. It is quick, has minimal ingredients and cooks in 30 minutes.
The simple five-ingredient breakfast casserole is made with lean ground turkey, protein-rich eggs, cheddar cheese, jumbo refrigerated biscuits and onion. The biscuits are placed on the bottom of a glass baking dish and cooked according to can directions. While the biscuits bake in the oven, cook the ground turkey and onion in a skillet until browned and cooked through. Put the cooked turkey on top of the baked biscuits, then top with the grated cheddar cheese. Scramble the eggs and put them on top of the cheese. Top with more grated cheese and bake until lightly browned on top.
You could add crisp cooked bacon, breakfast sausage or ham to this casserole or serve it on the side. If you love vegetables, layer some crisp-tender broccoli, red peppers, mushrooms or spinach on top. Serve this high-protein breakfast casserole for breakfast, brunch, lunch or as breakfast for dinner.

Ingredients
- 1 pound ground turkey
- 9 eggs
- 1/2 - 1 cup grated cheddar cheese
- 1 can (8 count) jumbo refrigerated biscuits
- 1/4 onion, chopped finely
Here’s how to make it:
- Use nonstick spray to coat a glass baking dish before laying biscuits along the bottom. Cook biscuits per directions on the can. Use your favorite variety of canned biscuits.
- While the biscuits are baking, cook the ground turkey and onions over medium heat. (Instead of ground turkey try pork breakfast sausage or even taco meat for a fun change.)
- When biscuits are cooked, layer the ground turkey on top. Add cheese to cover in a thin layer. (Add some fresh vegetables to the casserole like spinach, broccoli florets or red bell pepper.)
- Scramble the eggs and layer on top of the cheese.
- Top with more cheddar cheese. (Use whatever type of cheese you like for this recipe.)
- Bake the casserole for 20 minutes at 350 degrees F or until cheese and eggs are lightly browned. Store any leftovers in an airtight container in the fridge.
