As long as you have the time, making pot roast is so simple and easy – it’s hard to not have good results. A pot roast is braised, which means it is cooked with a small amount of liquid while being covered (with an option of browning first).
You’ll need:
- 1 1/2 - 2-pound chuck roast
- salt and pepper
- 1/2 onion, quartered
- 2 carrots, cut in thirds
- 1 - 2 celery stalks, chopped
- 1 cup gluten-free beef broth
- 1 can diced tomatoes
Here’s how you make it:
- Season meat.
- Sear meat.
- Add veggies to slow cooker.
- Add liquid and meat.
- Cook low and slow.
