To make this roasted squash you need just three (three!) simple ingredients. Here is your short shopping list: butternut squash, olive oil and fresh sage leaves. The squash roasts up in the oven in about 40 minutes while you prepare the rest of the meal. So easy – and healthy!

Ingredients
- 1 butternut squash, peeled, seeded and cut into 1-inch pieces (about 3 pounds)
- 2 tablespoons extra virgin olive oil
- 12 sage leaves
Here's how to make it:
- In large bowl, toss squash with olive oil and sage. Season with salt and pepper. (If you can't find fresh sage, you can sprinkle the squash with ground sage. Try this recipe with pumpkin, acorn squash or your favorite winter squash.)
- Spread squash on baking sheet in single layer. (For easier cleanup, cover the baking sheet with aluminum foil or parchment paper.) Roast in a preheated 425-degree F oven for about 40 minutes, until tender and lightly browned, tossing once halfway through. Serve. Store the squash in an airtight container and reheat in the microwave.
