Total Time: 20 minutes

Ingredients
Caramelized Apples
- 4 tablespoons butter
- 2 apples, cored and diced or sliced (peel if desired)
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
Pancakes
- 1 1/2 cups buttermilk pancake mix
- 1 teaspoon cinnamon
- 1 cup cinnamon applesauce (or regular applesauce)
- 1/4 cup water
Here's how to make it:
- To make the caramelized apples, melt the butter in a skillet over medium heat. Add the apples, brown sugar, cinnamon and salt. Cook, stirring often, until apples soften and caramelize, about 4 to 5 minutes. Turn off the heat and set aside. (You can peel the apples if you prefer.)
- To make the pancakes, in a bowl whisk together the pancake mix and cinnamon. Stir in the applesauce and water until just combined. (If you want a thinner batter, add more water.)
- Heat a griddle or nonstick skillet over medium heat. Pour in about 1/4 cup of the batter to form pancakes. Do not overcrowd the pan. Cook until bubbles form on the top of the pancakes. Flip the pancakes over and continue to cook until golden. Repeat until all the pancakes are cooked.
- Serve the pancakes with the apples on top.
