These easy pan-fried carrot onion patties are made with six simple ingredients. Plus, you get the health benefits of green onions and the health benefits of carrots in every crispy-on-the outside, tender-on-the-side bite. Here is your short shopping list for the vegetable recipe: carrots, green onions, eggs, smoked paprika, flour (all-purpose or gluten-free flour) and olive oil for frying.

Ingredients
- 4 carrots, peeled and grated
- 3 green onions, chopped fine, plus more for serving
- 3 eggs
- 1 teaspoon smoked paprika
- 2 tablespoons flour (all-purpose or gluten-free flour)
- 2 - 3 tablespoons olive oil, for frying
Optional for Serving
- Greek yogurt
Here's how to make it:
- Stir together the carrot, onion, eggs, smoked paprika and flour in a mixing bowl. Season with salt and black pepper to taste.
- Heat about 2 to 3 tablespoons olive oil in a skillet over medium-high heat. (Use enough to coat the bottom of the skillet.) Place heaping tablespoons full of the carrot-onion mixture into the pan. Flatten the mounds with a spoon.
- Cook for about 2 to 3 minutes, or until golden on the bottom. Flip the patties over and continue to cook another 2 to 3 minutes or until cooked through. Remove to a paper towel.
- Serve hot with yogurt for dipping, if desired. Store any leftovers in an airtight container in the fridge. These carrot onion patties reheat nicely in an air fryer.
