This high-protein veggie bread recipe is an easy, delicious way to eat more vegetables and protein. The nourishing veggie bread recipe is like a vegetable casserole in bread form, with a nice punch of protein, too!

This simple bread recipe is flexible in terms of the vegetables you add to it, but the carrots, yellow squash and green onions I used provided a nice flavor as well as the health benefits of carrots, the health benefits of squash and the health benefits of green onions. The protein comes from eggs, cottage cheese (check out the health benefits of cottage cheese), Parmesan cheese and mozzarella cheese. Learn why protein is so important to health.
To make this savory veggie bread, here are the wholesome ingredients you'll need to gather: eggs, cottage cheese, (or Greek yogurt), extra virgin olive oil, flour (all-purpose or gluten-free flour), Parmesan cheese, mozzarella cheese, baking powder, salt, carrots, yellow squash and green onions. Simply combine the ingredients in one bowl, spread the mixture into a baking pan and bake until cooked through and golden. So easy!
Similar to cornbread, this irresistible veggie bread can be served for breakfast, as part of a simple lunch, or as a side dish with just about any dinner. I sliced it into bars and stashed them in the fridge as easy grab-and-go snacks, too.

Ingredients
- 3 eggs, beaten
- 1 cup cottage cheese (or plain Greek yogurt)
- 3 tablespoons extra virgin olive oil
- 1 2/3 cups flour (all-purpose or gluten-free flour)
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3/4 teaspoon garlic powder
- 1 cup Parmesan cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 2 cups yellow squash, diced
- 1 cup carrots, shredded
- 4 green onions, diced
- black pepper, to taste (optional, but I used about 1/2 teaspoon)
Here's how to make it:
- In a large mixing bowl, add the eggs, cottage cheese and olive oil. Stir to combine. (Instead of cottage cheese, you could use plain Greek yogurt.)
- Add the flour, baking powder, salt, garlic powder, Parmesan cheese and mozzarella cheese. Add black pepper, to taste, if desired. Stir to combine. (To make this recipe gluten-free, use gluten-free flour.)
- Add the squash, carrots and green onions. Stir to combine. (You could use other vegetables or add some fresh herbs, if you like.)
- Spread the batter into a 13x9-inch baking pan that's been lined with parchment paper.
- Bake in an oven that's been preheated to 350 degrees F until cooked through and golden, about 35 to 45 minutes.
- Allow to cool a bit before removing from pan, slicing and serving.
- Store leftover bread in an airtight container (in the refrigerator lasts longer). Reheat in the oven or microwave.
