Hamburger Vegetable Soup Recipe Is a Classic Budget-friendly Dinner (30 Minutes) by Rachel Ballinger
This simple, hearty soup is a quick meal for a busy weeknight. It’s also very nourishing and a thrifty meal to stretch your budget. We enjoy it with a splash of milk and saltine crackers.
This budget-friendly ground beef soup recipe is from my cookbook My Everyday Ordinary Life Cookbook: 100 Recipes that Celebrate the Blessings of a Simple Country Kitchen.
To make this high-protein and high-fiber vegetable hamburger soup recipe you will need the following gluten-free ingredients: ground beef, onion, garlic powder, frozen mixed vegetables (learn more about the health benefits of frozen vegetables), canned tomatoes (check out the health benefits of tomatoes), beef broth, ketchup, oregano, salt, black pepper and water.

Ladle the soup into bowls for a delicious and comforting lunch or dinner that a complete meal. You could add a fresh salad on the side or some hot bread.

Ingredients
- 2 pounds ground beef
- 1 onion, chopped
- 2 teaspoons salt, plus more if needed
- 1 teaspoon black pepper, plus more if needed
- 2 teaspoons garlic powder, plus more if needed
- 32 ounces (1 bag) frozen mixed vegetables (I use the classic mix with carrots, peas, corn and green beans)
- 56 ounces (2 28-ounce cans) diced tomatoes
- 14.5 ounces (1 can) beef broth
- water (diced tomato can full)
- 1/4 cup ketchup (or a couple of squirts)
- 1 tablespoon oregano
Here's how to make it:
- In a skillet over medium heat, brown the ground beef and onion. Season with the salt, pepper and garlic powder while it’s cooking. Drain any excess grease.
- While the beef is cooking, combine the veggies, tomatoes, beef broth, water and ketchup in a big pot and simmer. Add the cooked ground beef and season to taste with salt, pepper, garlic powder and the oregano. Let it simmer for 20 minutes, or until the veggies are tender. Serve.
