Ingredients
- 6 tablespoons (3/4 stick) salted butter, in a few pieces
- 1 cup onion, diced
- 3 cloves garlic, diced or minced
- 3 cups tomatoes, diced
- 5 ounces fresh baby spinach
- 1 1/2 cups heavy whipping cream
- salt and pepper, to taste (optional, but I used about 1/2 teaspoon of each)
- shredded Parmesan cheese and/or fresh herbs (optional garnishes)
Here's how to make it:
- In a large skillet over medium heat, add the pieces of butter. Cook, stirring constantly, until butter is melted and browned, about 5 minutes.
- Add the onions and garlic. Add salt and pepper, to taste, if desired. Stir to combine and cook, stirring, for about 2 minutes.
- Add the tomatoes and stir to combine. Cook, stirring, until onions and garlic are tender, and tomatoes are soft, about 3 minutes.
- Add the spinach and stir to combine. Cook, stirring, until spinach is wilted and everything is integrated, about 3 minutes.
- Add the heavy cream and stir to combine. Cook, stirring, until sauce has thickened, about 5 to 7 minutes.
- Serve over pasta, rice, chicken or your favorite proteins. Garnish with shredded Parmesan cheese or fresh herbs, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave or on the stovetop.
