When fresh, sweet summer corn is 25 cents an ear at the grocery store, you know my freezer will be stocked. There's nothing like biting into a crunchy corn on the cob bursting with summer sweetness! This easy grilled corn recipe is my new favorite way to cook corn on the cob. This recipe is simple to throw together and doesn't need babysitting on the grill while you work on the rest of the dinner – whether it's for just you or your whole crew.
This easy budget-friendly fresh corn recipe can be made ahead or assembled quickly right before you starting grilling or cooking. The ingredient list is short for this vegetable recipe, and can be changed up each time to keep things interesting. Here's what to grab from the fridge and pantry for this gluten-free side dish: fresh corn on the cob (read about the health benefits of corn), butter and a seasoning – or seasonings – of choice. For this batch of corn, I went with chili powder, black pepper and sea salt.
After removing the husks and silky threads from the corn, you simply lay it on a piece of aluminum foil, slather it with butter and sprinkle on the seasonings. Wrap the corn up and toss it on the grill. Cook the corn for as long as you'd like. You really can't burn or overcook the corn unless the flame is too high and burns the foil. Just keep an eye on it.

These grilled corn is wonderful because you can prep just one for yourself or do a whole mess of corn and keep in the fridge if you're having a get-together or cookout for a group. Ingredients
- corn on the cob, husks and threads removed
- butter (about 1 tablespoon per ear of corn)
- seasonings (I used chili powder)
Here's how to make it:
- Lay the cleaned corn on a piece of aluminum foil. Slather on the butter and sprinkle with the seasonings. (For vegan corn, use vegan butter or olive oil.)
- Wrap the corn up tightly in the foil.
- Place on a hot grill. Cook for as little as 5 minutes if you like really crisp corn and up to 30 minutes. If you want to keep the corn on longer, simply move it out of the direct heat away from the flame to keep it warm.
- Open the corn up and enjoy!
- Store any leftover corn in an airtight container in the fridge. If reheating in the microwave, be sure to remove the aluminum foil first.
