- 1/2 cup flour (all-purpose or gluten-free flour)
- 1 cup granulated sugar (divided)
- 1 teaspoon baking powder
- 1/3 cup milk
- 1 egg
- 1/4 cup butter, melted
- 2 cups peaches, peeled, pitted and sliced
- 1/2 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup brown sugar (optional)
Here's how to make it:
- Whisk together the flour, 2/3 cup granulated sugar and baking powder in a mixing bowl. (For a gluten-free cobbler, use gluten-free flour.)
- Add the milk and egg. Stir to combine.
- Put the melted butter into a deep pie plate. Pour the batter over the melted butter. Do not stir. (If you don't have a pie plate, use an 8x8-inch, 9x9-inch or similar size baking dish.)
- Put the peaches into a mixing bowl and add 1/3 cup sugar, vanilla, cinnamon and nutmeg. Stir to combine. Pour the peaches over the batter. Do not stir.
- Sprinkle the top with the brown sugar, if using.
- Bake in a preheated 350-degree F oven for about 40 minutes, or until the top is golden.
- Serve warm with vanilla ice cream on top. Store any leftovers covered in the fridge. This recipe can be doubled and baked in a 13x9-inch baking pan.
