This creamy Mexican avocado dip blends up in minutes in a blender. The wholesome, fresh ingredients combine to make a cold dip that you will crave on a hot day or night. Here is your shopping list for this low-carb, gluten-free Mexican dip recipe: a ripe avocado, Greek yogurt, fresh cilantro, fresh jalapenos, fresh garlic, a lime for juicing and olive oil.

Cooking Tip: If you don't want much heat and a calmer dip, roast the jalapenos before adding them to the blender. Simply put them into a hot, dry skillet and cook over high heat until they char and soften a bit.
Serve the jalapeno, avocado and cilantro dip as an appetizer or snack with tortilla chips, fresh vegetables or bread. The dip is also wonderful drizzled or spooned over chicken, shrimp, fish, pork or beef. I spooned the tasty dip over taco-seasoned pan-fried chicken breasts on a bed of black beans. Ingredients
- 1 avocado, pit and skin removed
- 1/2 cup Greek yogurt
- 1/2 cup cilantro, packed
- 1 – 2 jalapenos (remove seeds and ribs removed for less heat)
- 1 clove garlic
- 1 lime, juiced
- 1 tablespoon olive oil
- water, for thinning (optional)
Here’s how to make it:
- Optional Step: If you want to roast your jalapenos, put them into a dry skillet over high heat. Cook, turning often, until the jalapenos begin to char.
- Put all the ingredients into a blender. Season with salt and black pepper.
- Blend until smooth. Taste and add more lime juice, salt and pepper, if needed. (If you want a looser dip, add a little water, a tablespoon at a time, until desired consistency is reached.)
- Spoon into a bowl and serve with desired dippers.
- Use as a sauce for your desired proteins. Store the dip in an airtight container in the fridge.
