High-Protein Chilaquiles Casserole Recipe for One or Two (4 Ingredients, 20 Minutes) by Donna John

Chilaquiles cravings are real. One night while scrolling through cooking videos, I came across one for a mini chilaquiles casserole that looked delicious. With a little tweaking, I came up with this easy vegetarian chilaquiles casserole recipe for one or two people. This is a delicious high-protein breakfast, lunch or dinner, and a delicious way to get all the health benefits of protein.
To make this Mexican-inspired mini casserole recipe you only need four simple ingredients. Here is what to grab from your fridge and pantry: tortilla chips, pickled jalapenos or fresh jalapenos, eggs (read about the health benefits of eggs) and cheese. Pick a Mexican cheese like cheddar, Monterey Jack, pepper-jack or even a cheese blend. You can use grated cheese or cheese slices. I used cheese slices because it makes this budget recipe even quicker to prep.
These baked eggs with tortilla chips, peppers and cheese are wonderful for a high-protein breakfast, lunch or breakfast-for-dinner dinner. Top the baked chilaquiles with whatever toppings you'd like. I started with just fresh cilantro, but ended up grabbing a jar of salsa rojo. Salsa verde would also be delicious drizzled on top. Next time I make this recipe, I'm making sure I have some of my jalapeno crema in the fridge, too.

Ingredients
- tortilla chips
- pickled jalapenos or fresh jalapenos, sliced
- 3 eggs
- cheese slices or grated cheese (I used Monterey Jack, but use your favorite Mexican cheese)
Here's how to make it:
- Put the tortilla chips on the bottom of an individual casserole dish.
- Put the fresh or pickled jalapenos on top of the chips. (I used pickled jalapenos. You could also use fresh poblano peppers.)
- Crack the eggs into a small bowl. Beat with a fork. Season with salt and black pepper, if desired. (If you more egg, crack a fourth egg.)
- Pour the eggs over the top of the chips and peppers.
- Top with the cheese. (Next time I will wait until the end of baking time to add the cheese so it stays cheesier.)
- Bake in a preheated 375-degree F oven for 12 to 15 minutes, or until the eggs are set. (If you like looser eggs, cook it for less time.)
- Serve. Garnish with fresh cilantro, if desired.
- You could also top the casserole with some green or red salsa. Store any leftovers covered in the fridge.
