Quick & Easy Skillet Chicken Ramen Recipe With Sweet Ginger Sauce by Donna John
Besides slurping on a bowl of ramen noodles the traditional way, you can use them in quick and easy recipes. So far I've made ground beef and ramen, beef and broccoli ramen and creamy ramen with sausage. My latest discovery is this skillet chicken ramen with a sweet ginger sauce. The simple Asian sauce coats the chicken and noodles, creating a delicious meal that's on the table in under 30 minutes.
To make this ramen chicken recipe you will need two packages of ramen noodles (any flavor because you will toss the seasoning packets), boneless chicken breast, green onions, white onion, garlic, low-sodium soy sauce, ketchup, honey, brown sugar and fresh ginger. The dish cooks up on the stovetop in about 10 minutes.
Serve these saucy Asian chicken noodles for a quick dinner on busy nights. If you have time, make some crunchy eggrolls or crab rangoons to serve with it.

Ingredients
- 2 packages ramen noodles
- 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 - 3 green onions, sliced, plus more for garnish
- 1/4 cup thinly sliced onion
- 3 - 4 cloves garlic, minced
- 1/4 cup low-sodium soy sauce
- 1 tablespoon ketchup
- 1/4 cup water
- 3 tablespoons honey
- 1 tablespoon brown sugar
- 4 teaspoons fresh grated ginger

- You can add other vegetables to this recipe when you add the green onions, onions and garlic. Try sugar snap peas, snow peas, mushrooms, broccoli, spinach or asparagus.
- For a little heat, add some sriracha sauce.
- You could use boneless chicken thighs instead of breasts.
Here's how to make it:
- Cook the ramen noodles (discard the seasoning packets) according to package directions. Drain.
- Add about 1 teaspoon of cooking oil to a large skillet or wok. Add the chicken and cook over high heat until it begins to brown, but is not cooked through yet. Season with black pepper.
- Add the sliced onion, green onions and garlic to the chicken. Cook, stirring, about 2 minutes.
- In a small bowl, stir together the soy sauce, ketchup, water, honey, brown sugar and ginger. Pour the mixture into the skillet.
- Simmer, stirring occasionally, about 3 to 4 minutes.
- Add the cooked ramen noodles. Toss to combine. Season with more black pepper, if desired.
- Sprinkle with more chopped green onion and serve.
