Getting enough fiber and protein in my diet is tops on my nutritional to-do list. High-fiber recipes and high-protein recipes are everywhere, but for some reason that didn't seem to include taco night. After combining some simple ingredients, that has changed at my house because of this ground turkey tacos recipe with beans and corn. So delicious, and this is a budget recipe so it's easy on my wallet.
The ingredients you need to make this homemade taco meat filling are basic pantry ingredients you probably keep in my fridge and pantry. Here is your short shopping list for this shortcut recipe: ground turkey, onion, fresh garlic, taco seasoning, salsa, a can of beans (check out the health benefits of beans) and whole kernel corn (read about the health benefits of corn). If you're making tacos, grab either taco shells or tortillas for serving.
These Tex-Mex-inspired turkey tacos are not only easy of the food budget, but help me get the health benefits of protein and the health benefits of fiber. A win-win-win! Not only does this turkey taco meat make delicious crunchy or soft tacos, but you can use it in taco salads, bowls, as a flauta or burrito filling or on nachos.
For tacos, add your favorite taco toppings like shredded lettuce, cheese, tomatoes, sour cream guacamole, fresh cilantro and/or pico de gallo. I love mine with pickled red onions.

Ingredients
- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 ounce (1 packet) taco seasoning
- 1/2 cup salsa
- 14 ounces (1 can) black beans, pinto beans or kidney beans, rinsed and drained
- 1 cup whole kernel corn (canned, fresh or frozen)
- taco shells or tortillas
Here's how to make it:
- Cook the ground turkey and onion in a skillet until the turkey is cooked through. Add the garlic and cook for 30 seconds.
- Add the taco seasoning, salsa, black beans and corn. Cook, stirring occasionally, for about 5 to 10 minutes. (For gluten-free tacos, make sure your taco seasoning is gluten-free. Read the label.) Serve in taco shells or as desired. Store the taco meat in an airtight container in the fridge and reheat in the microwave.
