Cook Time: 10 minutes (ovens vary)
Total Time: 15 minutes
Servings: 12
Ingredients
- 2 small overripe bananas, mashed
- 3/4 cup peanut butter (not the all-natural kind)
- 3/4 cup vanilla protein powder
- 1/3 cup semisweet chocolate chips
- 1/4 cup chopped walnuts (optional)
Here’s how to make it:
- In a large mixing bowl, add the mashed bananas, peanut butter and protein powder. Stir to combine and form a dough. (You can use creamy or crunchy peanut butter. If you want to be sure these cookies are gluten-free, ensure that your protein powder is gluten-free.)
- Fold in the chocolate chips, and the walnuts, if using. (You also could use your clean hands to combine everything.)
- Form dough into 12 balls then place them on a baking sheet that’s been lined with parchment paper. Gently press down on the cookies to flatten them a bit. (These cookies do not spread as they bake. The number of cookies depends upon the size of balls that you form.)
- Bake in an oven that’s been preheated to 350 degrees F until lightly golden brown, about 10 minutes.
- Allow cookies to cool a bit before removing them to a wire rack to cool completely. Store leftover cookies in an airtight container.
