Chicken salad is coming back to Jersey Mike's! Chicken salad is one of my favorite things, and after making Jersey Mike's tuna salad recipe, which is delicious, I knew recreating their chicken salad would happen soon. And it did. This copycat recipe for Jersey Mike's chicken salad is fantastic and pretty much the same as their tuna salad with a couple tweaks.
After watching a video of an employee preparing the chicken salad at Jersey Mike's, I knew recreating it would be pretty simple. The low-carb and high-protein chicken salad recipe uses less mayonnaise than the tuna salad, and tuna instead of chicken obviously, but other than that, it's pretty much the same concept.
You only need four simple ingredients to make a batch of this copycat chicken salad recipe at home. Here is your gluten-free shopping list: cooked roasted chicken (aka rotisserie chicken or leftovers from a good homemade roasted chicken recipe), celery (check out the health benefits of celery), black pepper and mayonnaise. Mix it up and get ready to bring the sandwich shop home!
Serve the creamy – but not too creamy – chicken salad as a sandwich on your favorite bread or with crackers or potato chips for lunch or as a quick high-protein dinner. (Check out the health benefits of protein.)
Making a sandwich? If you want to make it "Mike's way" add lettuce, tomato, onions and sprinkle with oregano, olive oil and red wine vinegar.

Ingredients
- 2 cups chopped cooked roasted chicken breast (I used a rotisserie chicken breast)
- 2 - 3 ribs celery, sliced
- 1/4 - 1/2 teaspoon black pepper (to taste)
- 1/4 cup mayonnaise
Here's how to make it:
- Put the chopped chicken into a bowl along with the celery and black pepper. Stir to combine. (If you prefer shredded chicken to chopped for your chicken salad, go for it!)
- Add the mayonnaise. (You can add as much or as little mayo as you'd like. At Jersey Mike's, it is not an overly creamy chicken salad.)
- Stir until the chicken salad is well combined.
- Serve immediately or refrigerate until ready to serve.
- Store the chicken salad in an airtight container in the fridge.
