Lemon zest adds so much flavor to this cake and other lemon dessert recipes. There are several ways you can zest a lemon. You can use a microplane, a citrus zester, a fine cheese grater, a vegetable peeler or a sharp knife.

Ingredients
- 1 tablespoon butter, softened
- 2/3 cup granulated sugar (divided)
- 2 teaspoons lemon zest
- 3 large eggs (whites and yolks separated)
- 1/4 cup flour (all purpose or 1:1 gluten-free flour)
- 1 cup milk
- 1/3 cup lemon juice
- powdered sugar, for dusting (optional)
Here's how to make it:
- Cream the butter and half of the granulated sugar together with an electric mixer. Add the lemon zest and egg yolks. Beat well to combine.
- Stir in the flour, milk and lemon juice.
- In another mixing bowl, beat the egg whites and remaining sugar until stiff peaks form. Fold the mixture gently into the batter.
- Pour the batter into a greased and floured 8x8-inch cake pan or round cake pan.
- Set the cake pan into a larger baking dish. Pour hot water around the cake pan, coming up about 1 inch on the sides. (You are creating a water bath.)
- Bake in a preheated 350-degree F oven for about 25 to 30 minutes, or until the cake is golden brown.
- Remove the cake from the water bath and set aside to cool a bit before serving. Dust with powdered sugar, if desired. Store the cake covered in the fridge.
