The divinely delicious cheese is wonderful on its own or used as a flavorful ingredient in many recipes – like this one.

Ingredients

• 1/4 cup extra virgin olive oil
• 2 eggs, lightly beaten
• 5.3 ounces (1 package) Boursin garlic and herbs cheese, at room temperature
• 1/2 cup low-fat plain Greek yogurt
• 1 1/2 cups flour (all-purpose or gluten-free flour)
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 cup mozzarella cheese, shredded
• 3 tablespoons fresh herbs, diced (I used parsley and chives, but you could use rosemary, basil, etc.)

Here's how to make it:

1. In a large mixing bowl, add the olive oil, eggs, Boursin and Greek yogurt. Whisk to blend.
2. Add the flour, baking powder and salt. Add black pepper, to taste, if desired. Mix well to combine. Add the mozzarella and stir to combine. (To make this bread gluten-free, use gluten-free flour.)
3. Fold in the fresh herbs. (I used parsley and chives, but you could use rosemary, basil, etc.)
4. Evenly spread the batter into an 8x4-inch loaf pan that's been lined with parchment paper.
5. Bake in an oven that's been preheated to 350 degrees F until bread is cooked through, crusty and golden (it should pass the toothpick test), about 40 to 50 minutes. (If the loaf is getting too brown, cover the top with aluminum foil.)
6. Allow loaf to cool for a few minutes, then remove to a wire rack to cool completely before slicing and serving.
7. Garnish with additional fresh herbs, if desired. Store the bread in an airtight container (in the refrigerator or freezer lasts longer). This bread is extra delicious when toasted.
