With just three ingredients and in only about five minutes, you can make an energizing meal to help fuel your morning. This creamy omelet with feta cheese is so quick and tasty. Plus, there's just something about a hot breakfast (especially during the colder months) that's really comforting.
This wholesome high-protein recipe offers the health benefits of cottage cheese, which is one of my favorite sources of healthy protein. It also includes feta cheese, which adds flavor as well as the health benefits of feta. To make this tasty omelet recipe, here's what you need to gather: eggs, cottage cheese and feta cheese. The fresh herb garnish is optional. You just mix up the gluten-free ingredients, pour them into a microwave-safe ramekin, then microwave it until cooked through. Couldn't be any easier!
You can add in your favorite cooked vegetable or meat to this omelet recipe. Or, you can garnish your eggs with fresh herbs, such as parsley or dill. Although the possibilities are endless, I like it just as is – and it's a great addition to a healthier Mediterranean diet.

Ingredients
- 2 eggs
- 2 tablespoons cottage cheese
- 2 tablespoons feta cheese, crumbled
- salt and pepper, to taste (optional, but I used about 1/8 teaspoon of each)
- fresh parsley, dill, scallions, etc. (optional garnish)
Here's how to make it:
- In a medium mixing bowl, add the eggs. Season with salt and black pepper, to taste, if desired. Whisk to blend. Add the cottage cheese and feta cheese. Stir to combine.
- Spray a ramekin with cooking spray. Pour the egg mixture into the ramekin.
- Microwave for 2 minutes, or until eggs are cooked through.
- Serve immediately. Top with fresh parsley, dill or your other favorite toppings (scallions, bacon, diced avocado, shredded cheese, etc.) Store leftovers in an airtight container in the refrigerator.
