This shortcut recipe saves the day when you want a quick bowl of creamy potato soup without all the work. Now would I normally make potato soup without fresh potatoes? No. But on busy days this quick shortcut potato soup – with whatever savory embellishments you add to the top – can fill you up in no time and is easy on the wallet.
To make this instant potato soup mix recipe you will need the following gluten-free pantry ingredients: a box of instant potato flakes, dry milk powder, chicken bouillon granules, dehydrated onion, parsley flakes, seasoned salt, dried thyme, white or black pepper and ground turmeric (check out the health benefits of turmeric). You simply stir all the ingredients together and store it in a mason jar, airtight container or even zipper food bag.

- 2 cups instant potato flakes
- 1 1/2 cups dry milk powder
- 2 tablespoons chicken bouillon granules
- 2 teaspoons dehydrated onion
- 1 teaspoon parsley flakes
- 1 teaspoon seasoned salt
- 1/4 teaspoon dried thyme
- 1/8 teaspoon white pepper or black pepper (or to taste)
- 1/8 teaspoon ground turmeric
Here's how to make it:
- Put all the ingredients into a mixing bowl. Stir well to combine. (Most instant potato flakes are gluten-free, but be sure to check the label is you're on a gluten-free diet.)
- Put into a mason, zipper food storage bag or airtight container.
- Label with the following instructions: To make soup, use 1/2 cup of soup mix to 1 cup of boiling water. Stir. Add desired toppings. (You could double it for a larger bowl of soup.)
- Store the soup mix in the pantry.
