When I want to cook chicken thighs – my all-time favorite part of the chicken – I'll sometimes buy chicken leg quarters and cut the thigh off myself. Not only is this cheaper, but I end up with a bag of chicken legs in the freezer. This crispy oven-baked chicken recipe is one way I enjoy cooking those little legs.
This baked chicken recipe is cooked in the oven in a cast iron skillet. If you don't have a cast iron skillet or other oven-proof skillet, you can bake the chicken in a baking dish. Here is your shopping list for this high-protein dinner recipe: chicken legs, butter, an egg, panko breadcrumbs (regular or gluten-free), Parmesan cheese, smoked paprika, garlic powder and onion powder.
The chicken drumsticks simply go through the breading station and into melted butter. Bake for another 30 to 40 minutes, depending on how big your chicken legs are, and your chicken winner dinner is done. This is one delicious high-protein dinner. (Check out the health benefits of protein.)

Ingredients
- 6 chicken legs (or your favorite chicken pieces)
- 2 tablespoons butter
- 1 egg
- 1 teaspoon water
- 1 cup panko breadcrumbs (regular or gluten-free panko)
- 2 tablespoons Parmesan cheese, finely grated
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
Here's how to make it:
- Put the butter in a cast iron skillet or oven-proof skillet and pop it into a preheated 425-degree F oven to melt. Put the eggs and water in one bowl and the panko, Parmesan, smoked paprika, garlic powder and onion powder into another bowl. (For a gluten-free dinner, use gluten-free panko.)
- Dip the chicken in the egg wash and then roll in the crumb mixture, pressing so it sticks to the skin. Remove the pan from the oven and place the breaded chicken into it. Drizzle with olive oil, if desired. (You can use any chicken pieces, but it will affect cooking time.)
- Bake for about 30 to 40 minutes, depending on how big your chicken pieces are. (Chicken is cooked through at 165 degrees F on a food thermometer.)
- Serve. Store any leftover chicken in an airtight container in the fridge.
