Here's the wholesome list of ingredients you'll need to gather for this amazing dinner recipe: extra virgin olive oil, onion, minced garlic, broccoli, ground chicken, eggs, panko breadcrumbs (or gluten-free panko) and shredded cheddar cheese. You sauté the vegetables in a skillet on the stovetop then combine the mixture with the rest of the ingredients. You then bake the casserole until it's cooked through and a bubbling golden brown.
This easy, delicious high-protein meal is a simple dinner all on its own, but I served it alongside some white rice with a fresh parsley garnish. It's perfect sliced and served as a sandwich on some toasty bread, too!

Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 1 cup onion, diced
- 3 cups broccoli, chopped
- 2 1/2 teaspoons minced garlic (or to taste)
- 2 pounds ground chicken (or turkey or beef)
- 3 large eggs
- 1 cup panko breadcrumbs (or gluten-free panko)
- 2 cups cheddar cheese, shredded (divided)
- salt and black pepper, to taste (optional, but I used about a 1/2 teaspoon of each)
- fresh parsley or other herb, for garnish (optional)
Here's how to make it:
- In a skillet over medium heat, add the olive oil, onions, garlic and broccoli. Stir to combine. Sauté until crisp-tender, about 3 to 4 minutes. Remove from heat.
- In a large mixing bowl, add the ground chicken (or ground turkey or beef), eggs, breadcrumbs and half the shredded cheddar. Season with salt and pepper, to taste, if desired. Stir (or use your clean hands) to combine.
- Add the vegetable mixture to the chicken mixture. Stir to combine.
- Spread the mixture into a 13x9-inch baking pan or casserole dish that's been sprayed with cooking spray.
- Bake in an oven that's been preheated to 400 degrees F for 25 minutes. Remove and top the casserole with the remaining cheddar cheese.
- Bake until cooked through and a sizzling golden brown, about 12 to 15 minutes. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Allow to cool a bit before slicing and serving. Garnish with fresh parsley, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
