Orzo has quickly become one of my favorite ingredients. Some of my favorite new recipes using orzo include this creamy Italian pesto chicken orzo casserole, creamy Boursin orzo chicken casserole, marry me orzo pasta casserole and broccoli cheese orzo casserole. This cheesy triple chicken spinach orzo pasta casserole recipe is the latest. If you like chicken flavor in your casseroles, this simple shortcut recipe is for you.
This easy orzo pasta casserole is triple chicken because it uses chicken broth, condensed cream of chicken soup and shredded, cooked chicken. The chicken flavor in this casserole is intense!
To make the creamy chicken casserole recipe you only need eight simple ingredients. Here is your short shopping list: orzo, chicken broth, dry onion soup mix, cooked chicken meat, fresh or frozen spinach (check out the health benefits of spinach), sour cream, a can of condensed cream of chicken soup and mozzarella cheese.
Serve this hearty chicken casserole for dinner with your favorite side dishes. I served mine with a fresh salad drizzled with honey mustard dressing and steamed broccoli.

Ingredients
- 2 cups orzo, uncooked
- 3 3/4 cups low-sodium chicken broth
- 1 ounce (1 packet) dry onion soup mix
- 2 cups cooked shredded chicken
- 10 ounces frozen spinach, thawed and squeezed dry, or 2 cups fresh spinach, chopped
- 8 ounces sour cream
- 10.5 ounces (1 can) cream of chicken soup
- 2 cups mozzarella, shredded (divided)
Here's how to make it:
- Combine the orzo, chicken broth, dry soup mix, cooked chicken, spinach, sour cream, can of soup and 1 cup of the mozzarella in a mixing bowl. Season with black pepper, if desired. (This recipe really does not need any additional salt.) Mix well.
- Pour the mixture into an oiled 13x9-inch baking dish. Cover with the lid or with aluminum foil. (Cover tightly so the orzo can cook.)
- Bake in a preheated 425-degree F oven for 30 minutes. Uncover and continue to bake for an additional 15 minutes.
- During the last 5 minutes of cooking time, sprinkle with the remaining mozzarella cheese. (You could also use gruyere, Monterey Jack or your favorite cheese.)
- Remove from the oven and let it sit about 5 minutes before serving.
- Store any leftovers in an airtight container in the fridge and reheat in the microwave.
