This easy, delicious BBQ chicken recipe relies on a simple technique to retain moisture, resulting in juicy barbecue flavor. After gathering the gluten-free ingredients (just chicken thighs and your favorite barbecue sauce), preheat your oven. Next, season the chicken with salt and black pepper and bake it for 10 minutes. Remove chicken from the oven, coat it with half the BBQ sauce then bake again for 20 minutes. Remove and coat with the remaining barbecue sauce and bake for another 15 minutes or so. Ta-da! Ingredients
- 1 pound boneless/skinless chicken thighs (about 6 thighs)
- 1 cup barbecue sauce (I used Sweet Baby Ray's, but you can use your favorite BBQ sauce or make your own barbecue sauce)
- salt and black pepper (I used about 1/2 teaspoon of sea salt and 1/2 teaspoon of ground black pepper)
Here's how to make it:
- In a 13x9-inch baking pan, add the chicken thighs. Season with salt and pepper, to taste. (I lined my baking pan with aluminum foil for easier cleanup. You can try this recipe with 4 chicken breasts, but they may not turn out as juicy and you may need to adjust cooking time.)
- Bake in a preheated 425 degree F oven for about 10 minutes, or until you can see some juice start to appear.
- Remove chicken and reduce oven temperature to 375 degrees F. Coat chicken with half the barbecue sauce then bake again for 20 minutes.
- Remove chicken and coat it with the remaining barbecue sauce. Bake until cooked through, about another 15 minutes or so. Chicken is done when it reaches 165 degrees F on a meat thermometer.
- Serve immediately with your favorite side dishes. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
