Garlic butter anything is delicious. But garlic butter roasted potatoes? Yum, right? But what about all the fat and calories that come with using butter. I tend to use more olive oil when cooking than butter, but you just can't get that rich, buttery flavor with anything else. Or can you? This skinny garlic butter roasted potatoes recipe has just 90 calories per serving, zero fat, is low in sodium and sugar and tastes amazing.
You only need four simple ingredients to make this low-calorie skinny recipe. Here is your short shopping list: small baby potatoes (check out the health benefits of potatoes), garlic powder, onion powder and butter cooking spray. The butter cooking spray is the skinny secret to these tender on the inside, crispy on the outside potatoes. If you want to add a little color to the potatoes, grab some parsley flakes, too. The potatoes cook up in about 40 minutes (ovens vary) in the oven.
There are many brands of butter-flavored cooking sprays on the market. I used a ghee cooking spray, but use your favorite. Any small potato will work for this recipe. I used gold potatoes (aka Yukon gold) because they also have a buttery taste, which is the theme of this side dish recipe.
Serve these potatoes as a side dish with chicken, beef, pork, lamb, turkey or seafood. I served mine with crispy Tuscan fried chicken breast and a fresh garden salad for a delicious dinner.

Ingredients
- 1 pound baby potatoes, cut in half
- garlic powder
- onion powder
- butter cooking spray
- parsley flakes (optional)
Here's how to make it:
- Spray the bottom of a baking dish big enough to hold all the cut potatoes in a single layer with butter cooking spray. Sprinkle some garlic powder and onion powder over the butter.
- Put the potatoes, cut side down, in a single layer on the butter. You could use baby red, white or gold potatoes. Fingerlings would even work.
- Sprinkle the tops of the potatoes with some garlic powder and onion powder. Season with salt and pepper, if desired. Mist again with the butter cooking spray.
- Bake in a preheated 375-degree F oven for about 20 minutes. Remove the potatoes from the oven.
- Flip the potatoes over and continue to bake until golden and tender, about 20 minutes more,
- Sprinkle with parsley flakes before serving, if desired. Store any leftover potatoes in an airtight container in the fridge.
