Easy, flavorful chicken dinners are a must around here. This creamy high-protein chicken casserole features two ingredients that make it one of the easiest and most flavorful chicken dinners I've made in a while: Boursin cheese and ground chicken.
Boursin is a creamy herb cheese spread that's a blend of garlic, parsley and chives folded into Gournay cheese. According to the Boursin website, Boursin cheese was created by François Boursin, a young French cheesemaker. He worked for two years on his recipe inspired by fromage frais, a traditional French cheese dish that blends garlic, fresh cream, soft cheese, herbs, salt and pepper. In 1963, François introduced this mouth-watering cheese to the world and it's since become famous. If you've not yet tried Boursin as an ingredient, consider this an easy opportunity to do so!
I love using ground chicken in weeknight dinner recipes because all you need to do is brown it, which is so simple. Here's the list of gluten-free ingredients for this one-pan dinner recipe: extra virgin olive oil, onion, bell peppers, ground chicken, Boursin cheese, ricotta cheese and shredded Parmesan cheese. You combine everything in the skillet on the stovetop then bake until it's a bubbly golden brown.

Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 1 cup onion, diced
- 1 1/2 cups bell pepper (I used green and yellow), diced
- 1 pound ground chicken
- 5.2 ounces (1 package) Boursin garlic and herb cheese
- 1 cup ricotta cheese
- 1 cup shredded Parmesan cheese (divided)
- fresh parsley or other herb for garnish (optional)
Here's how to make it:
- In a cast iron skillet over medium heat, add the olive oil, onions and peppers. (I used green and yellow bell peppers, but you can use any color bell peppers you prefer.) Stir to combine.
- Add the ground chicken. Break it up and sauté with the vegetables until it's browned and cooked through. Remove from heat.
- Add the Boursin, ricotta and half of the Parmesan cheese. Season with sea salt and black pepper, to taste, if desired. Stir until melted, well-blended and combined.
- Top with the remaining shredded Parmesan.
- Bake at 425 degrees F for 15 to 20 minutes, or until cooked through and a bubbly golden brown.
- Allow to cool for a few minutes before serving. Garnish with fresh parsley, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
