To make this easy slow-cooker recipe, you'll need to gather these seven gluten-free ingredients: boneless/skinless chicken thighs, extra virgin olive oil, bell peppers, onion, oregano, garlic powder and smoked paprika.

Ingredients
- 1 pound (about 6) boneless/skinless chicken thighs
- 1/4 cup olive oil
- 1 cup red and yellow bell pepper, sliced
- 1 cup onion, diced
- 1 teaspoon oregano
- 3/4 teaspoon garlic powder
- 1/3 teaspoon smoked paprika
Here's how to make it:
- In your slow cooker, add all the ingredients. Season with sea salt and black pepper, to taste, if desired. (I used red and yellow bell peppers, but you can choose your favorite bell pepper. Note that this recipe works with chicken breasts, too.)
- Cook for 4 hours on high or for 6 hours on low. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Using a slotted spoon, remove chicken from slow cooker and put it into a large mixing bowl. Using two forks, shred the chicken to your desired consistency.
- Put the chicken back into the sauce in the slow cooker and stir to combine.
- Serve on its own, on your favorite bread or over pasta or rice.
