Have you ever had one of those nights that you just do not feel like cooking, but you're hungry? The two thin-cut chicken breasts I had defrosted seemed to be mocking me from the kitchen counter. It was then I decided to prepare the chicken breasts as simply as I could by cooking them in garlic butter quickly in a skillet. Simple, but too simple? With just one simple cooking technique, I elevated the flavor of the chicken breasts without adding additional ingredients or much time. The secret? Brown butter.
Brown butter is simply butter that has been cooked until the milk solids turn golden brown, giving it a nutty taste. This quick three-ingredient, one-pan, high-protein chicken recipe was on the table in less than 15 minutes. Here is your short shopping list: chicken breasts, butter and fresh garlic.
These moist, juicy, buttery, garlicy chicken breasts are a wonderful, minimalist dinner with your favorite side dishes for busy nights, but are good enough to be served to company. Add a fresh vegetable, starch and/or salad on the side, and you have a complete dinner in no time. I served this budget recipe with macaroni and cheese and a romaine salad drizzled with fresh oregano vinaigrette.

Ingredients
- 2 chicken breasts, thin cut or pounded
- 3 tablespoons butter
- 4 - 5 cloves garlic, minced
Recipe Notes
- This is a recurring theme with me, but I added parsley flakes for color.
- You can buy thin-cut chicken breasts or use a meat mallet and pound regular chicken breasts out to an even thickness.
- Garlic is one ingredient you measure with your heart, so add as much or little as you like.
- You could use boneless chicken thighs instead of breasts.
- For even more garlic flavor, sprinkle the chicken with garlic powder along with the salt and pepper.
- This recipe can easily be doubled for four servings.
Here's how to make it:
- Heat a skillet (I used a cast iron skillet) over medium-high heat. Add the butter.
- Let the butter melt and cook until it gets foamy and turns a light golden brown, about 2 to 4 minutes depending on your skillet and stove. Do not let it burn.
- While the butter browns, season the chicken with salt and black pepper to taste. Sprinkle with parsley flakes, if desired.
- Once the butter is browned, add the chicken. Cook until golden on one side. Flip the chicken over and add the garlic. Continue to cook, stirring the garlic into the butter, until chicken is cooked through (165 degrees F on a food thermometer). (Reduce the heat if needed to not burn the garlic.)
- Serve the chicken drizzled with the garlic brown butter.
