Ground beef is one of my go-to ingredients. Not only is it inexpensive, versatile and easy to cook, I also have two freezers full in the garage. That's quite an incentive! This cast iron meatloaf recipe was the latest dinner using ground beef. The meatloaf recipe was moist and juicy, packed with flavor and easy to prep. Now that's a winner winner beefy dinner!
You only need seven simple ingredients to whip up this meatloaf for your family (and a cast iron skillet). Here is your shopping list: ground beef, eggs, onion, Worcestershire sauce, ketchup, rolled oats (check out the health benefits of oats) and brown sugar. The ingredients are mixed together, packed into a hot cast iron skillet, baked, topped with a simple sweet ketchup sauce and baked again. Simple!
Meatloaf is always a delicious comfort food meal served with mashed potatoes, which is what I chose as my side dish along with a fresh spring mix salad. The cast iron meatloaf would also be nice with roasted potatoes, egg noodles, a fresh vegetable or a grain.

Ingredients
- 2 eggs
- 1 onion, chopped fine
- 2 tablespoons Worcestershire sauce
- 1 cup ketchup
- 2 pounds ground beef
- 1 1/2 cups rolled oats
Topping
- 1/3 cup ketchup
- 2 tablespoons brown sugar
Recipe Notes
- If you don't have a cast iron skillet, you could use another ovenproof skillet or even bake it in a loaf pan.
- Be careful when packing the meat into the hot cast iron skillet. You don't want to burn yourself.
- Store any leftovers in an airtight container or cover the cooled skillet with plastic wrap and pop it into the fridge.
Here's how to make it:
- Put the cast iron skillet into the oven and preheat to 350 degrees F.
- Crack the eggs into a mixing bowl.
- Whisk until frothy.
- Add the onion, Worcestershire sauce and ketchup. Season generously with salt and black pepper.
- Stir to combine.
- Add the ground beef and rolled oats.
- Mix to just combine. Use clean hands or a spoon. Do not overmix.
- Take the cast iron skillet out of the oven. Carefully pack the ground beef into the pan. The meat will sizzle.
- Bake for about 45 minutes.
- Put the ketchup and brown sugar into a small bowl.
- Mix well.
- Spread the mixture over the top of the meatloaf.
- Bake another 10 to 15 minutes, or until meat is cooked through.
- Let the meatloaf rest a few minutes before slicing and serving.
