After organizing my spice shelf of shame, lots of spice blends have found their way into my main dishes and side dishes. Old Bay Seasoning has always been a favorite for crab cakes, tuna cakes and salmon patties (try my Old Bay salmon patties recipe), but now the spice has found its way into my roasted potatoes. These easy, crispy Old Bay roasted potatoes are a flavorful side dish that's simple to prep and bakes up while you make the rest of your dinner.
Crispy on the outside and melt-in-your-mouth on the inside, these potatoes are hard to resist. You only need a few ingredients to make this potato recipe. Here is your short shopping list: baby potatoes (think Yukon gold, red, white or fingerlings), Old Bay Seasoning, olive oil and parsley flakes for a little color.
The herbs and spices in the popular seasoning blend shine in this baked potato recipe. Serve the crispy potatoes as a side dish with chicken, pork, seafood, lamb or beef. I served mine with Mediterranean roasted chicken and a fresh salad with honey mustard dressing.
Old Bay seasoning was invented in 1940 by a German Jewish refugee in Baltimore names Gustav Brunn. Brunn was a spice maker in Germany before he came to the U.S., making spice blends for sausage. The seasoning blend is popular in Maryland (think crab cakes), New England, the Gulf Coast and in Mid-Atlantic States. Old Bay contains 18 herbs and spices.

Ingredients
- 2/4 - 1 pound baby Yukon gold potatoes, cut in half if large
- 2 teaspoons Old Bay Seasoning
- 1 tablespoon olive oil
- parsley flakes
Recipe Notes
- If you want spicy potatoes, use Old Bay Hot Seasoning.
- Any small potato will work for this recipe. Baby red potatoes, white potatoes or even fingerlings are good choices. If you can't find baby potatoes, cut larger potatoes into large chunks.
- Store the potatoes in an airtight container in the fridge. Reheat in the microwave.
Here's how to make it:
- Put the potatoes into a baking dish. Drizzle with the olive oil and sprinkle with the Old Bay and parsley flakes.
- Stir to coat the potatoes.
- Bake in a preheated 375-degree F oven until tender and crispy, about 40 minutes, stirring halfway through.
