Carrots are another vegetable always in my produce drawer. But confession: I get bored with carrots. I find myself pushing them to the side a lot and grabbing another vegetable lurking in the bottom of the drawer. This creamy carrot recipe may change that! Tender carrots are coated in a simple sauce that's tangy, sweet and so tasty.
To make these stovetop carrots you will need just six simple ingredients. Here is what to grab from your fridge and pantry to make this gluten-free vegetable side dish: fresh carrots (check out the health benefits of carrots), olive oil, lemons for juicing, Dijon mustard, honey and either fresh chives or green onion tops. After the carrots are boiled until tender, they are coated in the quick sauce and are ready to be served.
Serve these creamy, mustardy carrots as a side dish with dinner, or add them to your Thanksgiving, Christmas or Easter menu. No more boring carrots!

Ingredients
- 1 pound baby carrots
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/8 - 1/4 cup chopped fresh chives or green onion tops
Recipe Notes
- Instead of baby carrots, you could cut regular carrots into rounds or large julienned sticks.
- You can make these carrots up to two days ahead of time. Store the carrots in an airtight container in the fridge. Reheat in the microwave.
- You could use both chives and green onion tops (if you can't decide).

Here's how to make it:
- Bring some water to a boil in a saucepot. Add the carrots and cook until tender, about 10 to 14 minutes. Drain and set aside.
- To the same pot, add the olive oil, lemon juice, Dijon and honey. Whisk to combine and cook, stirring, for 1 minute.
- Add the carrots to the pot.
- Add the chives or green onion tops. Stir to combine.
- Serve hot.
