Ingredients
- 1 medium eggplant, cut into 1/2- to 1-inch cubes (about 4 cups)
- 2 tablespoons olive oil
- sea salt and black pepper, to taste

- You could add other seasonings like dried Italian seasoning, Indian spices, Mediterranean seasoning or your favorite spice blend.
- You do not have to peel the eggplant. But you could use a vegetable peeler to remove the skin, if desired.
- Store the eggplant in an airtight container in the fridge for up to five days.
Here's how to make it:
- Put the eggplant cubes onto a parchment paper-lined baking sheet. Drizzle with the olive oil and toss to coat. Sprinkle with salt and black pepper. Put the eggplant in a single layer.
- Bake in a preheated 425-degree F oven for about 25 to 30 minutes, or until tender and lightly browned. Stir the eggplant halfway through cooking time.
