That's especially true of this savory slow cooker Mediterranean balsamic chicken recipe. The flavors of balsamic vinegar, garlic, rosemary, oregano, onions and tomatoes meld while slow cooking, resulting in a moist and tender chicken dinner that will make your mouth water.

To make this easy slow-cooker recipe, you need nine simple ingredients: chicken breast, extra virgin olive oil, balsamic vinegar, diced tomatoes (read about the health benefits of tomatoes), onion, garlic, rosemary, oregano and fresh spinach. After only five minutes of prep and four hours of slow cooking, this succulent gluten-free chicken recipe is ready to serve.

Ingredients

• 2 pounds boneless/skinless chicken breast
• 2 tablespoons extra virgin olive oil
• 4 tablespoons balsamic vinegar
• 28 ounces (2 cans) diced tomatoes, with liquid
• 1 cup onion, diced
• 4 teaspoons minced garlic
• 1 tablespoon fresh rosemary leaves
• 1 teaspoon dried oregano
• 5 ounces (1 bag) fresh spinach

Here's how to make it:

1. Place the olive oil, balsamic vinegar, diced tomatoes, onions, garlic, rosemary and oregano into the slow cooker. Season with salt and pepper, to taste, if desired. (For best flavor, be sure to use a good quality balsamic vinegar. It makes a big difference in taste.)
2. Stir to combine.
3. Place the chicken into the mixture in the slow cooker, ensuring chicken is covered in the mixture.
4. Cover the slow cooker with the lid.
5. Cook on high heat for 3 1/2 hours.
6. Add the spinach to the slow cooker and again cover with lid.
7. Cook for an additional half hour. Chicken is done when it reaches 165 degrees F on a meat thermometer.
8. Stir to combine spinach with rest of the mixture. Serve on its own or over rice or pasta. Garnish with a rosemary sprig, if desired. Store leftovers in an airtight container in the refrigerator.
