Broccoli is a staple in my produce drawer. Because I cook broccoli so often, I'm always looking for new broccoli recipes. This easy broccoli cheese patties recipe really changed up dinner! The pan-fried vegetable patties are crisp on the outside, and moist and cheesy on the inside. This broccoli recipe was the perfect side dish with my meatloaf meatballs and will be put into dinner rotation.
You only need six ingredients, plus olive oil to cook them in, to make this simple vegetable side dish. Here is what you need to grab from the pantry and fridge: fresh broccoli, cheese, breadcrumbs, eggs, garlic and dried Italian seasoning. The broccoli is quickly steamed before being chopped and put into a bowl. The cheese, breadcrumbs, eggs, garlic and Italian seasoning are stirred in along with some salt and black pepper. The patties are formed, then fried up in a skillet.
If you have someone in the family who doesn't like vegetables, they may enjoy these crispy broccoli patties (plus they'll get the health benefits of broccoli). Serve the broccoli patties as a side dish with chicken, beef, seafood, pork or lamb. So good!

Ingredients
- 2 cups broccoli florets
- 1 1/4 cups shredded cheese
- 1/4 cup soft breadcrumbs
- 2 eggs
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- olive oil, for frying
Here's how to make it:
- Steam the broccoli until tender. Finely chop and put it into a mixing bowl.
- Add the cheese, breadcrumbs, eggs, garlic and Italian seasoning. Season with salt and black pepper, to taste. (Use whatever cheese you like for this recipe. I used Swiss cheese, but you could use cheddar, Gruyere, Fontina, Monterey Jack, pepper-jack or your favorite cheese blend. Grated cheese melts better than pre-packaged cheese, so grate your own fresh if you have time. I grated one slice of fresh sandwich bread to make my breadcrumbs.)
- Mix well to combine. Shape the mixture into patties (I got 8 patties).
- Heat the olive oil in a skillet. Fry the patties until golden on one side. (Do not overcrowd the pan when frying the patties.)
- Flip the patties over and cook until golden on the other side.
- Remove to a paper towel.
- Serve hot. Store any leftovers in an airtight container in the fridge for up to four days. Reheat in a dry skillet or in the microwave.
