The right spice blend can be your secret weapon to delicious food. Some seasoning blends I've tried are zero, while others have become the hero. My latest discovery (thanks, Mom!) is Kinder's Caramelized Onion Butter Seasoning. This spice blend truly tastes like what it claims to, and helped me create the most amazing chicken dinner with just three ingredients. The whole house smelled like butter (I had lots of thoughts of popcorn while it baked!), but the chicken is dairy-free.
To make this crispy baked chicken recipe, you need to locate a bottle of this caramelized onion butter seasoning blend. Check your local grocery stores (it is available nationwide) or see the link below. You'll also need bone-in chicken thighs (or your favorite chicken pieces) and olive oil. The chicken is seasoned liberally with the seasoning blend (even under the skin!) and then drizzled liberally with olive oil. The two ingredients combine with the chicken drippings to create the "butter" that flavors this gluten-free chicken dish to the bone.

- I didn't measure out the amount of seasoning and oil I used on my chicken, but the measurements above are close. Season and drizzle with your heart!
- For easier cleanup, line the bottom of the baking dish with parchment paper or aluminum foil.
- Next time, I will put a layer of thinly sliced onions on the bottom of the baking dish. The onions will serve as a bed while the chicken bakes, and also become caramelized for a fantastic side dish.
- For color, sprinkle with parsley flakes.
- Store any leftover chicken in an airtight container in the fridge for up to three days.
