To make this delicious bloody mary meatloaf recipe you will need just a few simple, budget-friendly ingredients. Here is your shopping list: lean ground beef, breadcrumbs, bloody mary mix, an egg, an onion, a red or green bell pepper, garlic powder, onion powder, black pepper, salt and ketchup. To spice things up, pick a spicy bloody mary mix. I used Big Bayou Bloody Mary Mix, but use your favorite.
The bloody mary mix adds not only flavor, but moisture to the meatloaf. This moist high-protein meatloaf is the perfect weeknight dinner with your favorite side dishes. I like to serve mine with a fresh vegetable and mashed potatoes or roasted potatoes.

Ingredients
Meatloaf
- 2 pounds lean ground beef
- 1/2 cup fresh breadcrumbs (you can use gluten-free breadcrumbs)
- 1 cup bloody mary mix
- 1 egg
- 1 onion, chopped small
- 1 red or green bell pepper, chopped small
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon black pepper, or to taste
- 1 teaspoon salt, or to taste
Topping
- 1 tablespoon bloody mary mix
- 1/2 cup ketchup
Here's how to make it:
- Make the topping by combining the bloody mary mix and ketchup in a small bowl. Set aside.
- In a mixing bowl, combine all the meatloaf ingredients. Do not overmix. (I like to grate a couple slices of fresh bread to make my breadcrumbs. For a gluten-free meatloaf, use gluten-free breadcrumbs.)
- Form the mixture into a loaf in baking pan or in a loaf pan. Spread the topping over the meatloaf.
- Bake in a preheated 350-degree F for about 1 hour or until meat is cooked through (ovens vary). Let the meatloaf rest a few minutes before slicing. Store any leftover meatloaf in an airtight container in the fridge for up to four days.
