Hearty Gnocchi Recipe With Sundried Tomato Sauce (20 Minutes) Italian Recipes Pasta Dinner Vegetarian

I love gnocchi and I love sun-dried tomatoes, so this gnocchi recipe inspired by EatingWell seemed like the perfect marriage of two of my favorites. But when I made the gnocchi recipe, the finished product was so much more delicious than I ever expected.

First off, the gnocchi, or tiny, pillowy Italian dumplings, develop this slightly crispy texture on the outside when you sauté them, while the inside remains delicate and tender. Coated with the creamy, slightly tangy sundried tomato sauce, the gnocchi are elevated to an even higher level of deliciousness.

When you’re forking up these irresistible gnocchi, you almost forget about the cannellini beans, which almost disappear in the sauce. However, these white beans make the dish richer and even more filling and healthy (read about the health benefits of white beans). Total yum!!

Enjoy this as a vegetarian main dish for dinner or as a side dish with chicken or even a mild white fish.

Ingredients

• 1/2 cup oil-packed sundried tomatoes, sliced or chopped
• 2 tablespoons oil from the jar of sundried tomatoes
• 1 package (16 ounces) shelf-stable gnocchi
• 1 can (15 ounces) cannellini beans, rinsed
• 5 ounces spinach
• 1/3 cup chicken broth
• 1/3 cup heavy cream
• 1 tablespoon lemon juice
• 1/4 teaspoon salt (or to taste)
• 1/4 teaspoon ground pepper (or to taste)

Recipe Notes

• You can also use regular olive oil instead of oil from the sundried tomato jar.

• Sprinkle the warm gnocchi with shaved Parmesan.

• Garnish with fresh basil leaves.

Here’s how to make it:

1. Heat 1 tablespoon of oil in a large nonstick skillet. Over medium-high heat, add the gnocchi and cook, stirring often, for about 5 minutes or until brown and slightly crispy.
2. Add the beans and spinach and sauté for a couple minutes, or until the spinach is wilted. Transfer everything to a bowl.
3. Add the remaining 1 tablespoon of oil to the pan. Over medium heat, warm the sundried tomatoes. Increase the heat to high and pour in the broth. Stir and cook this mixture until the broth has almost completely evaporated. Reduce heat back to medium and stir in the cream, lemon juice, salt and pepper.
4. Immediately return the gnocchi mixture to the pan and stir until the gnocchi is well-coated with the sundried tomato sauce.
