People may think of air fryers for more than just french fries by now, but let's not forget about them! While we love that you're making air fryer green beans, air fryer ground beef tacos, air fryer spanakopita rolls and air fryer salmon bites, we want to go back to basics here with an air fryer potato wedge recipe. And, this potato wedge recipe has the addition of cheese!

These gluten-free potato wedges with cheddar cheese are crisp on the outside and creamy on the inside. That's pretty much potato wedge perfection. To make this air fryer recipe you need just four ingredients. Here is your short shopping list: russet potatoes, seasoned salt, olive oil and cheddar cheese. The potatoes are cut into wedges, drizzled with olive oil, sprinkled with seasoned salt and air fried until tender and crispy. The cheese goes on last and is cooked for just a minute more. Now you're ready to dive in.

Serve the potato wedges as a side dish with your dinner or as an appetizer or snack. Don't forget a side of fry sauce, spicy mayo, ketchup or creamy truffle sauce.

  • 1 - 1 /2 pounds russet potatoes, washed and cut into wedges
  • 1/2 - 1 teaspoon seasoned salt
  • 2 tablespoons olive oil
  • 1 - 1 1/2 cups shredded cheddar cheese

  • You could substitute buttery Yukon gold potatoes for the russets. This may affect cooking time.
  • Try other seasonings like Greek, Mediterranean, Italian, Jerk, Tuscan or your favorite seasoning blend.
  • Instead of cheddar cheese, try gruyere, fontina, Muenster, gouda, Monterey Jack, pepper-jack or your favorite cheese.
  • Store the potato wedges in an airtight container in the fridge for up to five days.

Here's how to make it: 

  1. Put the potato wedges into a mixing bowl. Drizzle with the olive oil and sprinkle with the seasoned salt. Toss to coat. 
  2. Place the potatoes into the air fryer basket or on the tray. 
  3. Air fry the potatoes at 400 degrees F for about 22 to 25 minutes, turning halfway through cooking time. 
  4. Sprinkle with the cheddar cheese and cook 1 more minute to melt. Garnish with chopped fresh chives, parsley or green onions, if desired.
