These chewy, pop-in-your-mouth no-bake treats will satisfy any sweet tooth with their dried fruit and splash of maple syrup, but the addition of protein-packed walnuts will also give you a gluten-free burst of energy whenever you need it.

To make these quick no-bake energy snack recipe you will need walnuts, pitted dates, dried cranberries, old-fashioned rolled oats, pure maple syrup and lemons for zesting and juicing.

Store these low-sodium chewy cranberry lemon date balls in the fridge for breakfast on the go or a quick afternoon snack. Beware! While they mix up quickly, they may disappear even more quickly!

Recipe Notes

  • You can use dried blueberries or cherries instead of cranberries.
  • Honey can be substituted for the maple syrup.
  • If you don’t want the balls to be as lemony, you can use bottled lemon juice without the zest.
  • Refrigerate in an airtight container for up to two weeks.

Here’s how to make it:

  1. Pour walnuts, dates and cranberries into the bowl of a food processor. Process until completely combined, about 15 seconds.
  2. Add oats, maple syrup and lemon juice to the food processor bowl and continue processing until the mixture has a paste-like consistency, about 30 seconds. Add the lemon zest and stir to combine.
  3. Roll the mixture into 12 to 14 small balls. Refrigerate in an airtight container for up to two weeks.
