These garlic Parmesan roasted potatoes are so good and require a minimal effort and very few ingredients. These tasty roasted potatoes really do melt in your mouth!

Like I said, you need very few ingredients to make this melt-in-your-mouth roasted potatoes recipe. Here's your short shopping list: small potatoes, butter, garlic, dried thyme, Parmesan cheese, salt and black pepper. These gluten-free and vegetarian potatoes roast up in the oven in about 45 minutes.

Serve these creamy on the inside, crispy on the outside potatoes as a flavorful side dish with dinner.

Ingredients

  • 3 pounds small potatoes
  • 1 stick (1/2 cup) salted butter
  • 1 tablespoon minced garlic
  • 1/2 teaspoon dried thyme
  • 2 teaspoons grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • I used a 3-pound bag of potatoes from The Little Potato Company. I like the Little Duos, which are half red and half yellow potatoes.
  • You can use a smaller bag of potatoes and add some sliced carrots.
  • I tried parchment paper instead of aluminum foil for lining the baking pan, but it did not hold up very well with all the melted butter.
  • I usually brown my potatoes a little more than what you see in the picture, but I was out of time.

Here's how to make it: 

  1. Cut the potatoes in half and place in a large mixing bowl.
  2. Melt the butter and add the minced garlic, thyme, grated Parmesan cheese, and salt and pepper, to taste.
  3. Spoon half the melted butter mixture over the potatoes in the large mixing bowl. Mix with your hands. Spoon the remainder of the melted butter mixture over the potatoes and continue mixing by hand.
  4. Line a baking sheet with aluminum foil, shiny side down. Place the potatoes, flat side down, on the baking sheet. 
  5. Bake in a preheated 400-degree F oven for about 45 minutes, or until the potatoes are tender. Use a fork to check for tenderness.
