Ingredients
- 1 pound large shrimp, peeled and deveined
- 1/2 cup extra virgin olive oil
- juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
Here's how to make it:
- In a large mixing bowl, add the olive oil, lemon juice, oregano, smoked paprika and garlic powder. Whisk to combine, and add salt and pepper to taste, if desired. (I prefer to use fresh lemon juice, but you can use bottled if needed.)
- Add the shrimp to the marinade in the mixing bowl. Toss to coat with the mixture. Marinate in the refrigerator for 30 minutes.
- Place about seven shrimp on each skewer, depending on the size of skewer you’re using.
- Heat your grill to medium high heat. Grill the shrimp for up to 5 minutes on each side, or until desired doneness. You can baste the shrimp with additional marinade once they’re on the grill, if desired. Serve immediately.
