This Roasted Maple Sesame Potatoes Recipe Has Got Folks Talking Side Dishes Vegetables Vegan

Potatoes are a favorite side dish in my house. I'm always looking for new and different ways to cook potatoes. These roasted maple sesame potatoes don't lack in the flavor department and complement chickenporkbeef, lamb or whatever you like to serve roasted potatoes with.

For this easy roasted potato recipe you'll need just a few simple ingredients: small potatoes (think Yukon gold, tiny red or white potatoes or fingerlings), olive oil, sesame seeds, maple syrup and ground coriander. The potatoes roast in the oven until crispy on the outside and creamy on the inside. After baking, they take a trip into a skillet with toasted sesame seeds, maple syrup, olive oil and ground coriander. Delicious!

When I served these potatoes as a side dish for friends recently, they were the talk of the table. Several copies of the recipe had to be printed out before the goodbyes. Serve these maple sesame potatoes as a side dish for dinner or even as a quick lunch or vegan or vegetarian dinner. Yes, these potatoes are vegan, so your plant-based friends and family can enjoy them, too.

  • If you don't have or like coriander, try substituting ground cumin, curry powder or garam masala. 
  • Don't skip the step of toasting the sesame seeds. Toasting them brings out their flavor. Don't walk away because they burn quickly. 

Here's how to make it: 

  1. Put the potatoes onto a parchment paper-lined baking sheet. Season with salt and black pepper and drizzle with about 1 tablespoon of olive oil. Toss to coat. Bake in a preheated 400-degree F oven, flipping once, about 30 minutes or until crispy and tender. Remove and set aside. 
  2. Heat the remaining olive oil in a skillet. Add the sesame seeds and cook, stirring, about 1 minute. Add the maple syrup and coriander. Stir. 
  3. Put the potatoes into the skillet. Season with salt and pepper. Toss to coat. Cook, stirring often, about 3 minutes. Garnish with chopped fresh parsley, if desired.
