3-Ingredient Hawaiian Barbecue Chicken Recipe: A Tropical Slow-cooker Chicken Dinner Poultry Slow Cooker Budget-friendly Dinner

Sometimes I forget about my slow cooker, and then a recipe will come along that reminds me what a mindless meal-maker that thing is! This Hawaiian barbecue chicken recipe has three – count ‘em! – ingredients that you just toss in the slow cooker, turn it on and come back in a few hours and chicken is fall-apart yummy and dinner is ready!

All you need for this slow-cooker chicken dinner is chicken, barbecue sauce and crushed pineapple. Just dump the barbecue sauce and pineapple over the chicken, turn the slow cooker on and walk away. Could it be any easier?

A sweet barbecue sauce really brings out the flavor for this chicken dish, but you can substitute your favorite barbecue sauce. If you want the sauce to be slightly thicker, mix a little bit of the sauce with about 1 tablespoon of cornstarch, and then blend in the slow cooker with the rest of the sauce. Set for 10 minutes and it will thicken nicely. Serve this easy Hawaiian chicken over rice or couscous.

Ingredients

  • 3 - 4 boneless, skinless chicken breasts
  • 1 can (20 ounces) crushed pineapple (undrained)
  • 1 bottle (18 ounces) sweet barbecue sauce (I used Kraft Slow Simmer Sweet Honey BBQ Sauce)

Here’s how to make it:

  1. Put the chicken in a single layer in a slow cooker.
  2. Empty the bottle of barbecue sauce directly onto chicken breasts, making sure to completely cover them. 
  3. Without draining any juice, dump the can of crushed pineapple directly into the pot over the chicken.
  4. Slow cook 8 hours on low or 4 to 6 hours on high.
