Ingredients

• 1 cup (2 sticks) butter, softened
• 2 cups granulated sugar
• 2 eggs, at room temperature
• 2 teaspoons lemon zest
• 3 tablespoons lemon juice
• 2 3/4 cups all-purpose flour
• 1 cup quick-cooking oats
• 2 teaspoons baking powder
• large pinch of salt

Here's how to make it: 

1. In a mixing bowl, cream together the butter and sugar until fluffy. Add the eggs, lemon zest and lemon juice. 
2. In another mixing bowl, whisk together the flour, oats, baking powder and salt. Add the dry ingredients to the wet ingredients. Refrigerate the dough for about 1 hour. 
3. Shape the dough into balls and place on parchment paper-covered baking sheets. Use a drinking glass to gently flatten the cookies. (If the dough sticks, spray the bottom of the glass with nonstick cooking spray.)
4. Bake in a preheated 375-degree F oven for about 7 to 8 minutes or until lightly browned. Remove to cool.
